Analisis Sistem Pengolahan Biji Kopi Robusta Menjadi Bubuk Kopi Menggunakan Pendekatan Pemodelan Sistem

Abstract

Robusta coffee is a strategic plantation commodity for Indonesia, yet the quality of its ground coffee depends heavily on how each processing stage is carried out and controlled. Previous studies have largely examined the physical, chemical, and sensory effects of individual processing steps, while the processing chain has rarely been described as an integrated system. This study aims to analyze the processing of Robusta coffee beans into ground coffee using a systems modeling approach. A qualitative descriptive method was applied by developing a schematic system diagram, a process flowchart, a use case diagram, a business process diagram, and a Business Process Model and Notation (BPMN) model, with the use case and BPMN models validated in PowerDesigner. The results show that the processing system consists of interrelated components: stakeholders, inputs, processes, outputs, resources, controls, and threats. The process runs through sequential stages from sorting, pulping, soaking, draining, drying, and hulling to roasting and grinding, involving seven actors with clearly divided responsibilities. Both the use case and BPMN models passed validation with no errors or warnings. The resulting models provide a comprehensive representation of the processing workflow and can serve as a basis for evaluating, improving, and developing more efficient Robusta coffee processing systems.
